No-fuss Almond Milk

Make a cup in your blender:

    -5 soaked almonds

    -1 cup of filtered water

    -Sweeten to taste with raw honey or agave nectar

    -Flavor as you like with vanilla, raw cacao (chocolate) etc

    -1 tsp lecithin granules makes it creamy!

 

Blend until smooth. Blending in an ice cube just before using makes it cold. Soaking almonds for 8 hours is all that is needed—no sprouting. Throw away the soak water.

Some people filter out the small fiber bits but I don't.

 

Lecithin is an important nutrient. It supports nerve and brain health. Lecithin is also an emulsifier--makes oils and water mix well. Nut milks are best used immediately. I make it when I need it. I haven't drank cow's milk in years! Don't miss it.

 

Variations on this recipe: add or substitute raw hemp seed (hulled.) I buy mine on Amazon.com from Nutiva™. Hemp seed need not be soaked. It is a rich protein source and has beneficial oils minerals and other nutrients. Hemp is one of nature's best-for-you foods! Be sure to store hemp seed and other fragile raw nuts in a cold place—refrigerator.

 

You may vary the amount of each ingredient according to your taste and purpose. I think that raw honey makes for the best “milk” taste; vegans will not want to use honey, though.

 

 

Thai Apples

APPLE SLICES / GINGER / LEMON / CELANTRO

 

Toss apple slices or wedges in a mixture of:     
    
-Lemon juice, fresh

     -Ginger, fresh, minced
     -Cilantro, chopped  

I like small, sweet and fragrant apples like Fuji. Use organic ones so you can keep the peel, core and seeds. I have given this recipe to friends who do catering. They say it is a big hit! A simple, unusual and very tasty finger-food
